Fantastically Delicious 3 Ingredient Vegan Chocolate Pie & Pudding

Now and again you have to indulge your sweet tooth. If you love a good chilled chocolate pie or rich silky pudding, you’re going to love this vegan/vegetarian easy to make chocolate pie that can win over any omnivore. My vegetarian friend made it for me a decade ago when I was a meat-loving omnivore and it has remained one of my favorite pies ever since. The filling also makes a superb chocolate pudding to eat as a dessert all by itself!

All you need to make the pie is a prepared pie crust and three ingredients: non-dairy milk, chocolate chip morsels, and tofu. Don’t let the tofu turn you off. It works as a vehicle for the chocolate and helps with the thickening process along with the chips to create a pie slice that isn’t gooey but cuts and rests nicely on your fork like a good cheesecake. The 1st bite will be so good that you’ll be a tofu convert for life.

Here’s how to make either the pie filling or a stand alone pudding.

Ingredients

  • 12 ounces silken tofu (drained, patted dry)
  • 1 3/4 cups dairy-free chocolate chips (semi-sweet or dark)
  • 1/2 cup almond milk (or another dairy-free milk)

Looking for vegan chocolate morsels? I love dark chocolate so I use Enjoy Life’s dark chocolate morsels made from only unsweetened chocolate and cane sugar. Typically dark chocolate contains less sugar than semi-sweet but I find it more than sweet enough for this recipe.

Instructions

  • Melt the chocolate chips over a double boiler or on low in a small saucepan or in the microwave in 30 second increments. Once melted, work quickly to add to a blender along with the tofu and almond (or other dairy free) milk. Blend until smooth, about 1 minute, scraping down the sides as needed.
  • Pour over crust and smooth. Cover and freeze until set. Alternatively, refrigerate for at least 2 hours or until pretty firm. For easiest serving and longer storage, freeze.
  • Serve and top with coconut whipped cream and berries. Will keep in the fridge for several days, though best when fresh. Freeze for up to a few weeks, covered well.
