Dress Up Brussels Sprouts for Deliciousness: Easy Brussels Sprouts & Pecan Recipe

Think the only good Brussels sprouts are the ones in the trash can or wrapped in bacon? Think again. Here’s a quick, easy and yummy Brussels sprouts recipe chock full of nutrition. Make it on your stove top in one pan for simplicity and quick cleanup in 15 to 20 minutes. I just created this and couldn’t stop eating it. Try it out. I hope you enjoy the flavor as much as I do! The pecans give this a wonderfully soft crunch and mildly nutty flavor.

This recipe creation was inspired by my time in Asia and by eating homemade meals with my Japanese and other Asian friends. Cabbage with sesame oil and soy sauce is one of their staple stove top dishes, often dressed up with shredded carrot and other ingredients on hand. It’s usually served as a side. When scrambled with eggs though it makes a delicious breakfast of its own (learned from a Chinese host). However, a great variant is to use Brussels sprouts.

I only had Brussels sprouts in my fridge when I started craving this Asian cabbage dish. They’re basically little cabbages but with a more intense flavor. The sprouts proved to be a serendipitous substitution. Nuts are my own American spin and the flavors really complement each other nicely.

Now onto the recipe!

Brussels Sprouts & Pecan Stir Fry

Prep time: 10 min.

Cook time: 5-10 min.

Difficulty level: Easy

Servings: 4

16 oz. bag of fresh Brussels sprouts (not frozen)

3 Tbs. sesame oil

1/3 c. diced onion

2 Tbs. soy sauce

1/4 c. pecans

1/4 c. sunflower seeds

2 cloves diced garlic

Cut off the ends of the Brussels sprouts and discard (or save for homemade vegetable broth). Chop up the sprouts. The easiest way is to cut them into fourths, then turn and cut them again. Try thirds if they’re too small for fourths. Dice up 1/3 c. of onion. This usually means half a small onion or a quarter of a large one.

In a fry pan, heat up 3 tablespoons of sesame oil on medium heat. Once hot, add sprouts, onions, 2 tablespoons of soy sauce, pecans and the optional sunflower seeds and garlic if you’re including those. Stir to mix. Cover for 5 min, stirring occasionally, or until sprouts have softened and cooked down slightly.

Serve and enjoy!

Simple, quick and delicious – you’ll be delighted by this healthy and versitile dish.
